So… Since we went to Portsmouth it would be a lie to say that neither Miles nor I have been craving pie!
We wanted pie so bad that I bit the bullet and made some!
Miles is on a sausage diet because I returned from our two weekly shop with 40 sausages… Here’s why: we don’t like actual food shopping. We do click and collect because it’s free and it’s made a very positive impact on our relationship as I am very ratty when we actually brave the food shops. Anyway whilst doing this particular shop I somehow managed to add a substantial amount of sausages to my ‘trolley’ and whilst unpacking my shopping noticed this HUGE error and thus poor Miles has now got to eat his way through all of them and I am a calamity! (we have a pathetic excuse of a freezer).
So I made Miles some little sausage pies:
You will need:
– 2 gluten free sausages
– 1 block of ready to roll short crust pastry
– 1 beef stock pot
– 1 tablespoon of gluten free flour
– 2 onions
– 2 garlic cloves
– 1 sweet potato
– 300ml water
– salt and pepps
– 2 mini pie dishes or 1 medium one
– 1 beaten egg
1. Pre heat your oven to 200 degrees.
2. Wash and peel and chop the sweet potato into mini chunks, chop the onion and peel the garlic and pop into a roasting tin. Once your oven is ready, put your veg into it and roast for about 30-40 mins.
3. Whilst your veg is roasting roll out your pastry and line your pie dishes with it. Make sure you save enough for lids!
4. Grill your sausages and once ready slice into bite size bits. Set aside for now.
5. Prepare your gravy by dissolving your stockpot in the water in a pan over some heat. Once it’s fully gone add the flour and whisk over the heat until it thickens nicely.
6. Once your veg is ready, make a layer of it at the bottom of your pastry lined pie dishes. Then layer the sausages over the top and pour over the gravy.
7. Now place the pie lids over the top of the pies and crimp closed, brush with the beaten egg.
8. Pop in the oven for about 30 mins at 200 degrees or when the top of your pies are golden brown.
I, on the other hand opted for a slightly healthier option of spinach, sweet potato and goats cheese. I got the recipe here it was delicious! Mmmmm!
